Smoothie time!  Today we’re talking part two of getting rid of the breakfast rut blues.  As well as my current obsession with chia seeds.  We have always used quite a bit of flaxseed at our house but I never really even thought about chia seeds until the last few months when I started noticing recipes on other blogs.

Apparently I live under a rock.  Foodie fail.  Which was proven very apparent when I went to buy my first bag and the grocery store check-out lady proceeded to tell me all the things I could do with them and I just stood there nodding my head and going “oh really? cool!”

Although I did feel better when I got home.  Anytime I pull them out my husband just makes some crack about the chia pets from years ago and sings that song from the commercials (which by the way is now permanently stuck in my head.  Thank you very much).  Buttt.  His response made me feel better.  At least I knew you could eat them!  Sucker.

Anywho, smoothies!  Now that it’s actually been warmer outside I’ve finally felt like smoothies again for breakfast.  And this one right here?  It totally reminds me of those strawberries and cream oatmeal breakfast packets that I used to eat an obscene amount of as a kid.  I would freak out on my mom if we didn’t have any in the pantry for breakfast.  Not my finest moments.

So let’s be clear here – you can definitely taste the oats in this smoothie.  And the strawberries.  It’s a creamy, nice and thick smoothie that fills me up nicely and actually holds me over until my morning snack time.  Which for most people would probably mean that it will hold you over to lunch.  What can I say, I like my snacks.

One word to the wise – don’t let this smoothie sit for too long before you drink it – the chia seeds make it get superrrrr thick if you let it sit for a while (i.e. you spend 30 minutes taking photos and then try to drink it and realize it’s so thick that it barely moves when you tilt the glass to take a sip).  But it will be just fine if you consume it like a normal person would : )

And beware.  You’ll be seeing more chia seeds in the future.  You didn’t think I would forget about them now, did you?

Strawberry Oatmeal Chia Smoothie
Yield: 1 large smoothie (or 2 small)
  • ½ cup rolled oats
  • 1 cup frozen strawberries
  • ¾ cup milk of your choice
  • ¼ cup plain greek yogurt
  • 1 tablespoon chia seeds
  • about 1 tablespoon honey
  • 1 teaspoon vanilla extract
  1. Add the oats to a blender. Process until finely ground, about 15 seconds.
  2. Add the rest of the ingredients to the blender and process until the mixture is completely smooth. Adjust with additional honey if needed to achieve desired sweetness. Serve immediately.
As noted above, the chia seeds will make the smoothie get very thick if you let it sit for a while before drinking, so be sure to enjoy the smoothie right after you blend it up!

I've also been known to throw in a handful of baby spinach leaves. You won't even taste them!

    Bring on the chia seed recipes! I’m new to it too, and have never tried making anything with them, so I’d love to see what you come up. This smoothie sounds super yummy and healthy–and a nice break from my normal breakfast of toast! Adding oats sounds like a great idea too.

    Don’t worry, Ashley, I’ve been under that chia seed rock, too. I really want to give them a whirl. I wouldn’t worry at all if this smoothie got too thick … I’d just eat it with a spoon. It sounds delicious!

    The thing that got me was the color – such a gorgeous color to your smoothie! I can see how the oats and expanding chia seeds would make this nice and filling. I have yet to step into the world of chia seeds but this makes me more curious. Glad you’re having fun mixing up the usual routine. :)

    Hate when I get into a rut, and right now, I’m in a major smoothie rut. I make the same mixed berry, almond milk, ice and protein powder smoothie every single day. Literally. I don’t know why I never step out of the box, but I need to!! I have chia seeds in my pantry…… Happy weekend my friend!

    Haha my husband sings that song to me every time I add chia seeds into anything too – oh man, now it’s gonna be stuck in my head again gah lol.     I LOVE Chia seeds! You are definitely behind on the trend though. I’ve religiously been making chia seed pudding for breakfast. Proud of me? haha This smoothie looks good especially since it has chia seeds in it :)

      YOU have used chia seeds?? I’m impressed. lol Mostly that you actually make chia seed pudding! Which means I’m expecting some now the next time I see you : )

    This is such a cute post you’ve written!!!! I had a smile all along reading it! :) I love chia seeds!!!! We’ve been using it in milk based drinks here since I was a kid!!!! But never once has the thought of using it for breakfast occurred to me! I’m having this smoothie for breakfast tomorrow!!!! 😀

    I’m BAAADDD, I haven’t tried chia seeds at all yet. I saw them last week in the aisle and almost did it. I guess I just want to taste them first! I love the sound of the oats in here…such a hearty, satisfying smoothie with that and the Greek yo. YUM! Have a great weekend, Ashley!

    I feel like I’m always in a breakfast rut, so I love this smoothie! I’ll definitely be adding it to my list of smoothies to make. I love that it held you over until your morning snack because I almost always have a snack before lunch too, haha. I think I would feel better about snacking if I had a healthier breakfast, though. Like this smoothie. :)

    I just started seeding chia seeds crop up at my local grocery store. They never carried them before!!

    This just screams breakfast to me, especially on days when I know I won’t be eating all that healthy the rest of the day.

    Because breakfast gets so boring so fast if you don’t spice it up a bit. And maybe I’ll just have one small piece of dark chocolate (for the antioxidants of course) with this.

    Every time I see a recipe with chia – that song pops into my head – and stays ALL day!
    Love the thickness of this smoothie which doubles as a pudding if allowed to sit for a few! Deeelicious!
