Smoothie overload … or at least that’s what it seems like right now.  I know there are a bajillion (yes, bajillion) smoothie recipes floating around the internet at the moment but I’m ignoring that fact and sharing this one with you anyway.  Because we can always use another smoothie recipe.  At least in my world we can.

I’ve been on the green smoothie bandwagon for a while now and have no intention of jumping off anytime soon.  I also just like the color that it makes my smoothies and we all know that pretty colored foods are more fun to eat.  And yes that is a fact.  {Fact. Bears eat beets. Bears. Beets. Battlestar Galactica → I’m sorry I couldn’t help myself.  Favorite episode ever.  I totally heart Jim and Dwight}

Moving along … this vanilla mango spinach smoothie.  You can’t taste the spinach and it’s really almost like a tropical vacation, with the mango and ginger.  A little creamy, a little sweet and a hint of kick.

Perfect for after a workout or after eating too many cookies…

Or for sipping on while watching Jim and Dwight argue at work.  Michael?! Michael!!!!  Okay, I really am stopping now.

Vanilla Mango Spinach Smoothie
 
Yield: 1 large smoothie
Ingredients
  • 1 cup frozen mango chunks
  • 1 cup packed fresh baby spinach leaves
  • ¾ cup milk of your choice
  • 1 to 2 teaspoons freshly grated ginger*
  • 1 scoop vanilla protein powder**
  • ½ to 1 tablespoon honey***
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract
  • few tablespoons water, if needed
Instructions
  1. Add all of the ingredients except the water to a blender. Process until the mixture is completely smooth. Use a little water to thin out the smoothie or to get it going in the blender if needed. Serve immediately.
Notes
I like the higher amount of ginger in my smoothie, but start with less and you can always add more.

*I add the vanilla protein powder when I have this after a workout. This is completely optional and of course feel free to leave it out.

***Depending on my mood and the type of milk I’m using, I’ll add the honey. Start with either no honey or the lower amount and adjust to your taste.

    I’ve been trying to avoid extra sugar in all store-bought smoothie blends and making sure I have breakfast in the morning so I’m definitely bookmarking this to add to my “make your own smoothie” rotation :)

    I know a lot of people are adding spinach and kale to their smoothies, but I’ve never tried that! And I’m kind of a healthy nut too (except when it comes to my desserts). The vanilla mango part sounds yummy too, so maybe I’ll try adding spinach next time.

    The ginger and mango sound so good you almost have me convinced to ignore the fact that this smoothy is green. Hmmm. I eat green veggies but i don’t usually drink them. Maybe it comes from seeing and smelling green wheat grass shots at smoothie stores. Maybe its time to get over my green drink phobia….or i could just leave out the spinach :)

      haha I thought it was weird when I first saw green smoothies but now I like them : ) And you really can’t even taste the spinach in here!

    Love green smoothies and this one sounds so good with all the mango and fresh ginger! No such thing as smoothie overload here especially after all the heavy holiday food we had.     Okay…I feel a tad guilty that while so many people are making healthy green smoothies, I’m having a homemade mocha frappucino almost every morning instead! I am definitely intrigued and I’m pretty sure I’d enjoy this one of yours. Ginger is awesome (as is mango!) and I like that this doesn’t have a million ingredients going on. Thanks for sharing. If I get the urge to make a healthful smoothie, this will be the first I try.

    The office is the best!! I stopped drinking smoothies when it got super cold which means like three months without smoothies but as soon as January started I did the same thing – bring on the spinach! Love the vanilla in there, pinned!

      I did the same thing – until the holiday sugar craze started and my body was craving all the spinach! haha

    I’m loving all the smoothie recipes in the blogisphere right now! I never really make smoothies because my blender is AWFUL, but I just got a food processor, so that would probably work! This smoothie is such a pretty shade of green, and I could definitely go for something tropical right about now. :)

    I’m still making smoothies for breakfast despite it being so cold here!! I just love them so much and this one is totally up my alley! I’m definitely a fan of lots of ginger in my smoothie too. It’s so delicious and so good for you!

    This looks so good! Love all the flavors you have going on up in here. I’m totally not on the smoothie bandwagon yet, but am jumping on shortly. And I totally love the color of this smoothie! It’s gorgeous!

    Side Note: My favorite The Office moment was the “parkour” scene. Hilarious! Asheley and I still recreate that scene on occasion, which normally ends in one of us getting hurt.

    This is totally what I need after all the sweets and richness during the holidays. I love the idea of using mango and ginger here. When I make green smoothies, I always use honey as a sweetener over sugar. Love this Ashley! Have a fantastic week lady! :)

    There are never too many smoothie recipes! One of my favorite drinks ever with such great versatility – like this one. I love spinach, and it’s such a power food. Pinning so I can make this later! It’s a gorgeous green color too – gotta love that! Have a good day!

    I’ve had smoothie variations floating around my head for a little while, so I’m into this…besides, I can use a tropical vacation! I’ve never added spinach before, but I need to give that a try to boost the nutrition content. :) Your photos are gorgeous, too — I love the rustic look of that burlap scrap and those cute little straws.     Mango and ginger, two of my favorite flavors! I would love this except for the fact that my blender died on me over the holidays and I have yet to replace it. I had a really cheap blender that lasted me almost 7 years so I’m not sure whether I should upgrade to a Vitamix/Blendtec or buy something cheaper. So, I have yet to buy anything, but I’m craving a smoothie more than ever!

      Our blender is so old! But it’s still truckin’ along : ) Which amazes me since it’s not a really good one!
