I am so pumped for this week on the blog.  Why is that you ask?  Because it is officially Crocktoberfest.  Yes, you read that right.  A week full of recipes all for your handy dandy crockpot.  Well, three recipes to be exact – breakfast, dinner and dessert.  And not just here on Cookie Monster Cooking, but on some other awesome blogs as well.  So get your crockpot ready – it’s go time.

And first up?  Breakfast.  This casserole is perfect for company – it makes a lot of food, is satisfying and of course delicious.  I will say that this definitely tastes best fresh, so save this for a time when you’ll have plenty of hungry people around.  Thanksgiving or Christmas morning?  Yes and yes.

My favorite part about this breakfast is that you can quickly get everything ready and throw it in the crockpot.  Either get up a little early and cook it on high for four hours or make it right before you go to bed and let it cook on low overnight (which is my personal favorite since then you wake up to an awesome breakfast that is ready to go).

Crockpot Southwest Breakfast Casserole
Yield: 10 to 12 servings
For the casserole:
  • 30 to 32 ounces frozen shredded hash browns
  • 2 cans black beans, drained and rinsed
  • 2 cups freshly shredded cheddar cheese
  • 2 cups freshly shredded pepper jack cheese
  • 1 green pepper, chopped
  • 6 green onions, sliced
  • 12 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
For serving:
  • chopped cilantro
  • salsa
  • sliced avocado
  • hot sauce
  1. Generously spray a large crockpot with nonstick cooking spray.
  2. Place half of the hash browns in the bottom. Top with half of the black beans, half of the cheddar cheese, half of the pepper jack cheese, half of the pepper and half of the green onions. Repeat this process.
  3. In a large bowl, whisk together the eggs, milk, salt and pepper. Pour the mixture evenly over the top.
  4. Cover and cook on high for about 4 hours or on low for about 8 hours, until the eggs are set.
  5. Serve with a sprinkle of cilantro, some salsa, sliced avocado and hot sauce.

      Made it for my coworkers on black Friday and it was a huge hit. We work retail amd it wss as good in the late afternoon as at 6:00 a.m. Just finished putting it on for our Christmas breakfast. I just hope Santa can keep his hands out!

    What a delicious flavorful breakfast, Ashley! It sounds silly, but my favorite part of crock pot cooking is the way it fills the house with delicious smells! I haven’t ever tried breakfast in the crock pot. The idea of waking up to breakfast already cooked is very appealing. The next best thing to a butler! (Though I wouldn’t mind one of those too. :) )

    What a fabulously tasty breakfast Ashley! I am loving this ‘Crockfest’ you have going on – sounds fun! I think I need to purchase a slow cooker. I can see my husband’s eyes rolling at the thought – ‘not more gadgets!’. Maybe I should trade my juicer in for one…think I would get a lot of use of out it?

      haha I love it. Mine sat unused when I first got it but now I use it all the time (particularly during the colder months for some reason!)

    I love that name –“Crocktoberfest”. Hee hee… I’m always looking for new crockpot recipes and a breakfast casserole sounds perfect for brunch. I have never cooked eggs in a crockpot before and would love to give this one a try. Yummy Ashley! :)

I have a big slow cooker that I got when I first got married but never used much. Lately, I’m finally using it and I love the magic of it. Never thought about uses for breakfast so thank you!!

    Okay, Crocktoberfest? That sound like super fun but I don’t have a crockpot! I think it’s high time I get one, it seems to make cooking so much easier. This breakfast casserole looks delicious, and I love that it’s so hearty and vegetarian!

    I AM GOING TO LOVE CROCKTOBERFEST! It combines my love of crock pots and the month of october AND delicious food! This should be a national holiday, I think. 😀 This casserole sounds amazing Ashley; just what me and the friends need for a chilly October morning.

    How perfect! I have just started using my crockpot more often now too since the weather has gotten a little bit cooler. This breakfast casserole sounds fabulous and I love that I can wake up to a satisfying breakfast!
